Why is Water Management Important for Coffee Shops?

Water plays a direct role in how coffee extracts and ultimately tastes.  The minerals, presence of disinfectants like chlorine, sediment, and overall chemical makeup of water influence flavor clarity and consistency.

The chemical makeup of municipal and well water sources varies widely. Because of this inconsistency, raw water supply is often unsuitable for use when crafting coffee beverages, and the proper selection of filtration treatment is paramount.

In my experience, the first step to establishing the proper filtration equipment is viewing the manufacturer water quality specifications for any equipment that uses water within your coffee shop. This information is freely available and specifies the water quality needed to keep the brewing equipment in good condition.

Interestingly, water that is too pure can also create challenges. Reverse osmosis water for example is incredibly pure water with a high percentage of dissolved solids removed.

While RO filtration is beneficial for coffee applications, it is important to note that direct RO water used for espresso and coffee brewing equipment is rarely called for.

When minerals are stripped away entirely, water can become aggressive in its search for balance. Direct RO water encountering metal machinery parts will slowly leach trace minerals from the metal components within coffee brewing equipment.

Over time, this process will contribute to internal damage and can even cause premature replacement of costly brewing equipment. For this reason, achieving the proper blend of purified RO water and balanced mineral content water is very important.

Minerals within the water, such as calcium and magnesium, also contribute to consistent, great-tasting coffee so finding the perfect balance is crucial for not only the longevity of brewing equipment, but also taste and consistency.

For optimal coffee brewing results and equipment protection, total dissolved solids (TDS) levels in product water used for coffee beverages should be within 70-100 parts per million (ppm). The right system design helps ensure optimal brewing conditions while protecting valuable equipment assets.

Why Does Coffee Shop Filtration Equipment Need Preventative Maintenance?

Even the best water filtration systems cannot perform effectively without routine preventative maintenance. Filter manufacturers specify life expectations based on time in use or gallons processed. When these intervals are not closely monitored, filters become clogged or overloaded, allowing undesirable elements to pass downstream into brewing equipment.

In my experience overdue filters have contributed to additional debris flowing downstream due to what is sitting on the surface of or within the filter media being carried with the flow of water. Many coffee business operators have cited infrequent preventative maintenance services as reason for inconsistent or bad beverage quality and brewing equipment down time. Consistently replacing filters within standardized service windows is essential to maintain beverage quality and extend equipment lifespan.

Many coffee business operators elect to handle preventative maintenance procedures internally in an effort to reduce overhead costs. In my experience, this approach is only sustainable for a limited time as the demands of daily operations often cause filtration service tasks to fall low on the priority list.

Employee turnover rate combined with the burden of everyday facility tasks often leads to filtration services being forgotten, until they become the cause of a major problem leading to equipment downtime.
